Food Day Friday: Beignets

There's a French Quarter Beignet recipe in the February issue of Southern Living. Husband loves beignets. So, I tagged it for him to try later.

Now with Mardi Gras season upon us, he wanted beignets but forgot about the Southern Living recipe so found a Paula Deen recipe on the Food Network website.

um, it's the exact same recipe except Paula added one quarter teaspoon more salt.

Also Husband substituted butter instead of using shortening.

Southern Living says you can store the risen dough in the fridge for up to a week.

Husband made them Saturday night for dessert and we were still enjoying them Sunday morning for breakfast. They really are fabulous. Husband who has actually eaten beignets in New Orleans says they are good but not quite at light as he remembers. (ftiw, I thought his were pretty light)

Somehow Son managed to get his hands on THREE beignets (placing them in the window seal until he was ready to eat them) sigh.
It cracked me up that the kids kept calling them "soft donuts" They also believed them to be fabulous.

I had them with orange juice, coffee and turkey bacon for breakfast. seriously fabulous.

Yummo!!! On a side note....I wonder if the butter substitution for shortening had something to do with the lightness factor....you know, with a pie crust, the shortening makes a crust light and flaky....butter makes a better tasting crust for sure...I use a butter/shortening combo for my crusts'. Just a thought!
